Local food truck expands services

Local food trucks are working to stay afloat during the pandemic by expanding services. News 18 spoke with two food truck owners about their goal to create more variety for the community.

WEST LAFAYETTE, Ind. (WLFI)—You may be used to seeing local food trucks traveling around the community serving their delicious food in the summer. Well, now even in the winter months you may not see them traveling to you but you can travel to them.

Guac Box owner Matt Bestich secured a location near Purdue's Discovery Park in the Purdue West Plaza. The restaurant is located at 1400 West State Street, Suite K. 

Bestich said the spot sat vacant for nearly a year.

He said he never expected to move into a space during a pandemic and it's nice being able to offer services during winter months when food trucks aren't traveling.

"The height of the pandemic, I didn't think that we'd still be here but here we are and we are masking up, we are providing socially distant meals," said Bestich. 

Owner of Grilled Chicken & Rice Ahmad Athamneh has been at his location for a year. It sits next door to The Guac Box. Athamneh told Bestich about the vacant space. 

Grilled Chicken & Rice offers pick up only. Athamneh said he wants more local businesses in the Purdue Plaza to add more local food choices for students and the community.

"The more the merrier," said Athamneh. "You are creating momentum. It's not about competing with one another it's about adding more. It's a win, win situation to partner with local businesses."

Both Food trucks will still operate in the summer. Owner of The Guac Box said he is taking applications right now specifically for the lunch hour.
