Why did you get start a restaurant?
I’ve been in the restaurant business since 1988, when weopened the Green House, which is known today as Christos New CityGrill. My family and I have always enjoyed interacting with thepeople of this community and we run several restaurants throughoutLafayette and West Lafayette.
What’s your favorite cooking tip?
It’s all about the ingredients. Always use the freshestingredients you can find and whenever possible buy local. And a tipI always pass along: everything needs a little salt and pepper!
What’s your favorite thing to eat?
Braised meats. Basically anything that is cooked low and slowwith layers and layers of flavor.
Anything else you would like to add?
For me, dining out is always just about the food. I believethere are three components that make for a great dining experience-Food, Service, Atmosphere. It’s dinner as theater and itshould be social, fun and good.
