LAFAYETTE, Ind. (WLFI) - John Christos, along with his wife, Eva, owns RedSeven Bar & Grill .

Why did you get start a restaurant?

I’ve been in the restaurant business since 1988, when we opened the Green House, which is known today as Christos New City Grill. My family and I have always enjoyed interacting with the people of this community and we run several restaurants throughout Lafayette and West Lafayette.

What’s your favorite cooking tip?

It’s all about the ingredients. Always use the freshest ingredients you can find and whenever possible buy local. And a tip I always pass along: everything needs a little salt and pepper!

What’s your favorite thing to eat?

Braised meats. Basically anything that is cooked low and slow with layers and layers of flavor.

Anything else you would like to add?

For me, dining out is always just about the food. I believe there are three components that make for a great dining experience- Food, Service, Atmosphere. It’s dinner as theater and it should be social, fun and good.
