LAFAYETTE, Ind. (WLFI) — After two years of planning, Walt's Pub and Grill is opening to the public on Tuesday in West Lafayette. Construction crews first broke ground on the new restaurant back in January.
The ribbon-cutting ceremony for Walt's Pub and Grill starts Tuesday morning at 11 o'clock. The restaurant is located near the Yeager and Kalberer intersection in West Lafayette.
The vision for the space was to make sure it did not look the same throughout. Creating a good ambiance, while having affordable prices was very important during this project.
The city hopes this causes more sit-down restaurants to pop up here on the north side of town. West Lafayette Mayor John Dennis says the community has expressed an interest in having more dining options.
"Build it and they will come," said Dennis. "We honestly believe that this is the first of many of these types of developments on the north end of West Lafayette, maybe not specifically in the research park, but on the north end of West Lafayette."
Builder and owner David Hood said, "We're not believing that competition of more restaurants coming or that type of activity coming necessarily competes with us. We're more believers that activity breeds activity."
Owner Walt Foster's words of wisdom to future nearby restaurant owners is to be involved in the community.
"There's a lot of chain restaurants and we don't want to be a chain," said Foster. "We want to go ahead and be an independent operator, owner and make sure that we are involved in the community and we plan to be involved in the community as much as we can like we are in Lafayette."
This is the second Walt's Pub and Grill to open in Greater Lafayette. Foster said you won't see this style of restaurant in the state of Indiana.
"With Walt's, this is actually the first horse out of the block to go ahead and bring a quality restaurant to the north end of West Lafayette," Dennis said.
